The condiment that goes on everything at home: rice, grilled fish, beef, soup, eggs at midnight. Sakurab (the native Lanao scallion), fresh ginger, siling labuyo and toasted coconut, pounded on stone. Nothing else. No preservative, no MSG, no oil added.
Mild has chili in it, because palapa without chili is not palapa, but a Manila palate will be fine with it. Hot is what my family eats and I would not start there unless you know.
Pounded Tuesday and Friday mornings and jarred the same day. Unopened it keeps about three weeks at room temperature and roughly four months refrigerated. Once opened, keep it cold and use a dry spoon. The oil separating and sitting on top is correct, stir it back in.
