Sourwood honey from a single apiary, extracted and bottled unheated and unfiltered beyond a coarse strain that takes out the wax. Pale, almost water white, with the anise and caramel finish that people either come back for every year or do not notice at all.
Sourwood blooms for about two weeks starting in late June and only at elevation. Everything in this jar was gathered inside that window from one yard, so tell me which yard you want. Leicester runs a little darker and heavier. Sandy Mush is lighter and more floral. The label carries the yard name and the extraction date.
It will crystallise eventually because real honey does. Stand the jar in warm water and it comes back. Do not microwave it.
This is a limited crop, between 900 and 1,400 pounds in a good year and far less in a bad one. When the year sells out I stop taking orders rather than substituting.
