I am a sommelier in Amsterdam. I spent nine years on Dutch restaurant floors and four of them running a list of 140 references in De Pijp. Now I work for myself. Three things here. The tasting, which is six wines at a table for six to twelve people and no ceremony. The list rebuild, which is five days inside a restaurant taking its wine programme apart and putting it back together properly. And a seasonal case of twelve bottles from northern Italian growers, priced so that a person who works for a living can drink well on a Tuesday. I take no importer commissions on any of it. What you pay me is what I earn.
